Tomato, Fruit, Mint and Feta Salad

Salads- simple, intricate, main or a side, they are everywhere.  This one by J. Kenji López-Alt from Serious Eats is the former. Simple. My lunch and/or dinner the last two days and possibly the only way I am eating my daily recommendations of anything these days!picisto-20150807061925-567388 (1) 1. Cut ripe tomatoes (a mix of variety).
2. Add nectarines or apricot. picisto-20150807062304-124284 (1) 3. Sprinkle with torn mint leaves.
4. Toss with olive oil, salt, pepper.

5. Add crumbled feta to the mix.
6. Taste, adjust seasoning as need.  Enjoy.
